Chicken And Sausage Jambalaya


Ingredients:
1 pound raw chicken thighs, boneless & skinless, diced
1 pound chicken andouille sausage, sliced (I am using Trader Joe's chicken andouille sausage)
1 medium yellow onion, diced
creole seasoning to taste - I am using Tony Chachere's original creole seasoning. (1.5 tsp for the chicken)
1.5 Tablespoons oil (I used avocado)

Instructions:
  • First step is Season the chicken thighs with salt, pepper and cajun seasoning.
  • And then, Brown the chicken thighs for about 4 to 5 minutes, until most of the pinkness is gone.
