Ingredients:
1 medium red onion finely diced
1 tsp freshly ground black pepper
2 medium courgette
2 tsp sea salt
1 tbsp olive oil

Instructions:
  • First step is In a large saucepan, heat the oil over a medium heat. Add the onion, salt and pepper then fry for 5 minutes until the onion has softened.
  • And then, Meanwhile, chop the courgette and aubergine into 1 inch chunks. Add these to the saucepan along with the garlic, ginger and spice mix. Stir well and cook for another 5 minutes or until the spices release their aromas.
